Bimbo Bakeries USA is going to build a 300,000-square-foot, $75 million bakery facility in Rockwall, Texas, that will bring 130 new jobs to the city, the Rockwall Economic Development Corp. announced. The Rockwall facility will be in the Rockwall Technology Park between Discovery Boulevard, Data Drive and Springer Road in Phase II of the park. The site is just south of Interstate 30 in Rockwall. A 20-foot boulder crushed a bakery but not a spirit. Robert Dubuc is resurrecting Bread, Coffee & Cake in Mendota Heights, Minn., about 10 minutes from the St. Paul spot where a boulder "the size of two vans" fell on the roof and destroyed the original bakery about a year ago. The new digs, a former Tuesday Morning store at Mendota Plaza on Minnesota 110 and Dodd Road, will be three times the size of the former location. More
